Latin-style Ratatouille. Put your crockpot to use!

This is such an easy way to get a delicious and healthy dinner on the table with very little effort. Let the crockpot do the work! This recipe is perfect for professionals and busy parents that don’t have a lot of time to spend in the kitchen.

Ratatouille is definitely a comfort dish for me. I am switching it up a bit by adding chayote squash, jalapeño, lime juice… and for bold flavors, a healthy dose of Alejandra’s Signature Sazón. It works perfect as a main or side dish. Hope you give it a try!


Latin-style ratatouille

– 2 chayote squash
– 1 large eggplant
– 3 Crookneck/yellow squash
– 4 large roma tomatoes
– 1 large red bell pepper
– 1 large green bell pepper
– 1 jalapeño, sliced
– 2 cloves garlic, minced
– 1 tbsp Alejandra’s Signature Sazón
– Coarse sea salt
– 2 tbsp freshly squeezed lime juice

Cube all veggies and add them to crockpot. Add jalapeños, garlic, salt to taste, and Signature Sazón. Add lime juice and mix with a spoon. Cover with lid and cook on low heat for 4 hrs or high high for 2 hrs. If not temperature setting on crockpot, cook for 4 hours. Sprinkle fresh herbs and serve with a wedge of lime. This is amazing as a main or side dish!

Ratatouille at estilo Latino

– 2 chayotas
– 1 berengena grande
– 3 calabacines amarillos
– 4 tomatos roma (jitomate)
– 1 pimentón rojo grande
– 1 pimentón verde grande
– 1 jalapeño, rebanado
– 2 cabezas de ajo, picadas
– 1 cucharada Alejandra’s Signature Sazón
– Sal marina

Cortar todos los vegetales en cubos medianos y agregarlos a la olla de cocción lenta. Añadir los jalapeños, ajo, sal al gusto, y Signature Sazón. Agregar el jugo de limón y mezclar todo con una una cuchara. Cubrir olla de cocción lenta con su tapa y cocer a temperatura baja (low) durante 4 horas o a temperatura alta (high) durante 2 horas. Sírvalo con hierbas picaditas y un trozo de limón. Esta receta es maravillosa como plato principal o como acompañante!image1.JPG
