Crockpot Chipotle Chicken

Chicken thighs are juicy and have so much flavor! This dish is succulent, spicy, and comforting. Serve with it over steamed rice or with a side of wilted greens. Buen provecho!

Crockpot Chipotle Chicken

Ingredients
  • 8 bone-in chicken thighs, with skin
  • Coarse sea salt
  • Freshly ground black pepper
  • 1 can (7oz) of chipotle peppers in adobo sauce
  • 4 lg carrots, sliced
  • 4 lg celery stalks, sliced
  • 6 roma tomatoes, chopped
  • 1 lg onion, chopped
  • 2 cloves of garlic, minced
Preparation
Season chicken thighs with salt and pepper then place on the bottom of the crockpot. Add the chipotle peppers and all sauce in the can; spread around so every piece has some sauce on them. In a bowl mix carrots, celery, tomatoes, onions, and garlic, then season with a little salt and pepper. Add vegetable mixture to crockpot, cover with lid, and cook for 7 to 8 hours on low or 3 to 4 hours on high. If no temperature setting is available, cook for 7 to 8 hours.
Optional: After your season the chicken, place all pieces on a baking tray—skin side up—on the broiler at high temperature for 4-5 minutes until skin is golden and crispy.

Pollo al Chipotle (Hecho en olla de cocción lenta)

Ingredientes
  • 8 piezas cuadril/muslo de pollo, con su piel
  • Sal marina
  • Pimienta negra
  • 1 lata (7oz) de chile chipotle en salsa de adobo
  • 4 zanahorias grandes, rebanadas
  • 4 tallos de apio/celery, rebanados
  • 6 tomates roma (jitomate), picados
  • 1 cebolla grande, picada
  • 2 dientes de ajo, picaditos
Preparación
Sazonar el pollo con sal y pimienta luego colocar en el fondo de su olla de cocción lenta. Agregar los chiles con toda la salsa en la lata; regar hasta que cada pieza de pollo tenga un poco de salsa. En un envase grande mezclar zanahorias, apio/celery, tomate, cebolla, y ajo luego sazonar con un poco de sal y pimienta. Agregar vegetales al crockpot, cubrir con su tapa, y cocer durante 7 a 8 horas en temperatura baja or 3 a 4 horas en alta.
Opcional: Luego de sazonar el pollo, colocar todas las piezas en una bandeja con la piel hacia arriba y asar bajo el fuego en alto durante 4-5 minutes hasta que la piel este crujiente.
Nota: Sin aceite—uno de los beneficios de cocinar en ollas de cocción lenta.
